Tasty Tuesday: Chili

This week is an exciting week! Holly Clegg graciously sent us a copy of her newest cookbook Bien Durante El Cancer. Eek! We’ll have a recipe for you next week complete with English translation.  So, be sure to stop by for that!

In the mean time, I’m here to help you make it through the first rough days of winter with Holly’s delicious chili recipe. Who doesn’t love a nice bowl of hot chili on a cold winter night? And this recipe is super easy.

Ingredients:

  • 2 pounds ground sirloin
  • 1 teaspoon minced garlic
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 (16-ounce) jar chunky salsa
  • 1 (16-ounce) package frozen corn
  • 2 (141/2-ounce) cans seasoned beef broth
  • 1 (15-ounce) can pinto beans, drained and rinsed

Directions:

Cook the meat and garlic together until the meat is cooked through. Drain excess liquid. Add the meat and all other ingredients in a large pot and let them cook together. Bring the mixture to a boil and reduce heat and cook for 15 minutes. Then pour in a bowl, top with cheese of your choice and ENJOY!

The meat provides protein and iron while the the corn and beans are a good source of vitamin C! Go enjoy your chili and stay warm, my friends!
