Happy Tuesday! I hope your week so far has been grand. If your day could use a little pick-me-up, you should definitely give this week’s recipe a try! Mocha Cappuccino Pudding Pie. There is nothing but goodness in this pie, as the title shows. Plus, it’s super simple!
- 1(4-serving) package instant chocolate pudding
- 2 teaspoons instant coffee granules
- 1 cup skim milk
- 1 cup fat-free vanilla ice cream
- 1 cup fat-free whipped topping, thawed
- 1 prepared reduced fat graham cracker crust
All you do in mix the pudding, coffee granules, ice cream, (coffee or otherwise) and milk. Beat 2 minutes until creamy. Fold in whipped topping. Transfer to prepared piecrust. Freeze 30 minutes or longer before serving.* For mine, I substituted the coffee granules and cup of fat-free vanilla ice cream with a cup of my favorite coffee ice cream! I made it a little easier, plus I had left over ice cream. Yum! *
Yes, folks, it is that simple. And it is delicious! The author of the recipe suggests substituting a vanilla nutritional drink supplement for the skim milk. It will add in some vitamins and minerals, making this a little healthy. Who doesn’t love making a naughty dessert a little nice.
